Boxing Day Turkey Pie

This recipe for Boxing Day Pie by our brilliant chef, Rhys, is a great way to use your leftover turkey, along with any leftover Christmas veg (sprouts, Romanesque, leeks – whatever you have)!

Ingredients

  • 1 onion, diced
  • 2 cloves of garlic, chopped
  • 75g farmhouse butter
  • 75g plain flour
  • 500ml Sutton Lucy Milk
  • 250ml chicken stock
  • 1/2 tbsp English mustard
  • Fresh thyme
  • Left over Christmas Turkey
  • Left over Christmas veg
  • Puff pastry

Method

  1. Fry 1 diced onion in a splash of olive oil until soft.
  2. Add 2 cloves of chopped garlic and 75g of salted farmhouse butter. Once the butter has melted, add 75g of plain flour and stir into a paste.
  3. Slowly add 500ml of milk, and 250ml of chicken stock, stirring as you go.
  4. Next add half a tablespoon of English mustard, a couple of sprigs of fresh thyme and season to taste. That’s the sauce done!
  5. Now chop up your leftover turkey in chunks, along with any leftover Christmas veg (sprouts, Romanesque, leeks – whatever you have), and add it to your sauce. Pour the filling into an oven proof dish, roll out a sheet of puff pastry and cover.
  6. Bake at 200ËšC for 25 minutes or until pastry is golden brown.
