Our Deli specialises in selling artisan, British farmhouse cheese. We work with cheesemakers that value the quality of what they produce and whose practices sustain our environment and cultural heritage. They produce food with a story - a provenance and place.
Many of these cheeses reflect the unique climate and culture of a given region, others channel the taste and inventiveness of their maker, often drawing inspiration from European cheesemaking traditions and applying them to British terroirs. The quality and flavour of each cheese is a reflection of the biodiversity of the farm along with the astute interventions made by cheesemakers and affineurs.
Whilst traditional methods of fermentation and dry curing were originally developed as a way of preserving fresh meat, it was quickly discovered that these techniques resulted in revolutionary flavour. We source our charcuterie from small scale producers championing ethical farming and traditional techniques as well collaborating with artisans such as Steve & Pete from Good Game, who make their Bresaola and Pastrami from our home reared Ruby Red beef.
We believe in a food system that is built on relationships and collaboration rather than competition and protection. We work with likeminded artisans who are committed to their craft, upholding traditional practices and producing food for flavour, not yield.
We set out to showcase the best possible food, with the best possible service. Our team is a collective of passionate likeminded individuals who engage with the food we work with and contribute to our strong people culture. We work closely with our producers, from curers to matures, to ensure we are continuously evolving and strengthening our artisan food community.
Through establishing and maintaining collaborative relationships with our producers we strive for a greater understanding of the food we sell. This is enhanced by encouraging our people to grow their skills by visiting our exisiting suppliers as well as sourcing exciting new produce.
