OUR TOP TIPS FOR USING YOUR HOMEGROWN HERBS

Being advocates for growing your own fresh produce, we are so excited to have The Hairy Plant Pot Company available in the farm shop! We've put together some recipes and inspiration for cooking with your own fresh herbs!

The Hairy Plant Pot Company sustainibly grow a range of beautiful garden plants and herbs in their Nursery in Hampshire, ready for you to plant at home. All their plants are gorwn in peat-free compost and potted in coir fiber pots, made from up-cycled coconut husks.

Planting your herbs;

  • Simply pop the whole plant (including the pot) into the ground and regularly water
  • The pot will gradually biodegrade in the soil or on the compost heap. 

Here's our top tips for using your herbs; 

  1. Garlic & Oregano Pesto
  2. New Potatoes with Lemon & Chive Butter 
  3. Raspberry & Mint Mojito
  4. BBq'd Chicken Thighs with Thyme & Rosemary
  5. Wild Strawberry Jam 

Garlic & Oregano Pesto 

plantingIngredients;

  • 2 cups of your homegrown fresh Oregano 
  • 1/4 cup of lightly toasted Pine nuts 
  • 1/2 a cup of grated Parmesan from our deli 
  • 2 cloves of Garlic 
  • 3/4 cup of Honest Olive Toil 

Method; 

  • Wash the oregano, and pat dry 
  • Place all the ingredients in a food processor 
  • Pulse until the ingredients are well combined
  • Store in the refrigerator for up to two weeks

New Potatoes with Lemon & Chive Butter

  • 25g of softened Butter 
  • 1 tbsp of your homegrown Chives 
  • Zest of 1/2 a Lemon
  • 1 1/2kg of our New Potatoes 

Method; 

  • Blend the butter with the chives and lemon zest
  • Boil the potatoes in salted water until tender, drain and tip into a serving dish
  • Top with the butter 

BBq'd Chicken Thighs with Thyme & Rosemary

butchers_instore (1)Ingredients;

  • 4 Chicken Thighs from our Master Butchers, skin on 
  • 1/2 a medium Onion 
  • 1/2 a Lemon, sliced 
  • 5 of your homegrown fresh Thyme sprigs 
  • 2 of your homegrown Rosemary sprigs 
  • 3 tsp of Salt
  • 3 tsp of ground Black Pepper 

Method;

  • Heat the oven to 500 degrees
  • Spread the onion slices and garlic cloves in a baking dish 
  • Add the lemon, thyme & rosemary 
  • Season the chicken, add to the dish 
  • Bake for 40 - 50 minutes, until the juices run clear 
  • And serve 

Raspberry & Mint Mojito

Rasp_mint_mojitoIngredients;

  • 4-6 of our locally grown Raspberries 
  • 1/2 a Lime 
  • 1 tsp Granulated Gugar 
  • 2 of your homegrown Mint sprigs, leaves picked 
  • Ice 
  • 50ml Devon Cove White Rum 
  • Devonia Sparkling Water 

Method;

  • Muddle the raspberries, lime & suagr in a tall glass
  • Clap the mint leaves in your hands (this releases thier flavour) and put into the glass
  • add the ice and rum, stir and fill with sparkling water

 


Wild Strawberry Jam 

wild_strawberriesIngredients;

  • 500g of your homegrown Wild Strawberries
  • 400g of Jam Sugar
  • 1 tbsp of Lemon Juice 

Method;

  • Chill a small saucer in the freezer
  • Place the strawberries, sugar & lemon juice into a large heavy bottomed saucepan
  • Gently heat the fruit & sugar over a low heat until the sugar has completely dissolved & no grains remain
  • Increase to a medium-high heat untill the mixture starts to bubble
  • Allow it to bubble (but not boil) for 10 minutes, stiring frequently 
  • Test to see if setting point has been reached by placing a small drop of the jam onto the chilled saucer
  • Push your finger through the jam & if the surface wrinkles, it’s done. If not continue cooking for a further 2-3 minutes & test again
  • Pot up into clean, sterilised jars & label

There are endless recipies you can experiment with and get creative  when using your homegrown herbs, and add flavour to your cooking!
