Seared Skirt Steak with Chimichurri Sauce

Spice up your steak... We love this recipe for Seared Skirt Steak with Spicy Chimichurri Sauce from @livbyfood on Instagram!

Mouth-watering, 40-day dry aged steak from our Master Butcher's marinated in delicious garlic, parsley and chilli, then seared to perfection and smothered in a luscious spicy chimichurri.

Ingredients

  • Two skirt steaks from our Master Butchers

For the marinade...

  • The Garlic Farm Garlic cloves
  • Parsley
  • Honest Toil Olive oil
  • Salt & Pepper
  • Chilli

For the chimichurri...

  • 1/2 cup finely chopped parsley
  • 1/4 cup mint finely chopped
  • 1/2 tsp oregano
  • 2 tbsp red wine vinegar
  • 2 tbsp fresh lime
  • Lots of glugs of extra virgin olive oil
  • Fresh chilli finely chopped
  • Season with salt & pepper

Method

  1. Marinate the steak overnight. Make the chimichurri by mixing all the flavours together in a bowl - leave this in the fridge overnight to let all the flavours mull together.
  2. When ready to eat, take the steak out a few hours before to allow the meat to come to room temperature.
  3. Heat your pan to a high heat with and olive oil.
  4. Cook your steak for three minutes till golden, then flip and sear for another 2-3 minutes ( if you like rare or medium rare).
  5. Allow the meat to rest for a couple minutes before serving and then cover with the lovely chimichurri sauce!
