Slow Cooked Rib of Beef

As the summer arrives, classic roasts tend to go out the window.. But our cattle are still producing beautiful, succulent prime roasting joints. Perfect slow roasted on the Big Green Egg and served with seasonal salads. A barbecue must have!

Ingredients

  • 2kg Top Rib from our Master Butchers
  • Dorset Sea Salt
  • Bo Tree Kampot Pepper
  • Marinade of your choice... we recommend Mezze Soul Pomegranate Vinegar! 

Method

  • Bring your rib roast to room temperature, season with salt & pepper and add your marinade (optional) . 
  • Place into a roasting dish, add half a cup of water and cover with tin foil. 
  • Place in the Big Green Egg or oven for 3 hours (for a 2kg rib) at approximately 130°c - we recommend a Meater Block for keeping an eye on the temperature! 
  • Once the recommended cooking time has been reached, turn the heat up to 190°c for 10 minutes. Adding more marinade if you wish.
  • Remove the rib of beef from the oven and leave to rest for at least 15 minutes

Recommended cooking times...

  • Up to 1.5KG - 2 1/2 hours at 130° 
  • 1.5-2KG - 3 hours at 130° 
  • 2-2.5KG - 3 1/2 hours at 130° 
  • 2.5-3KG - 4 hours at 130°
