Sam and Felicity Ursell rear a breeding flock at Domesday Farm near Exeter. Sam's organic chickens are so good that they only need seasoning with salt and pepper. However, try Sam's ultimate bread sauce which is great served hot with chicken or cold in sandwiches.

Ingredients

  • 600ml Milk
  • 50g Butter
  • 1 Chopped onion
  • 6 Cloves
  • 6 Peppercorns
  • 2 Garlic cloves
  • 1 Bay leaf
  • 3 Sprigs of thyme
  • 100g White breadcrumbs
  • 4 tbsp Single cream or mascarpone
  • Freshly grated nutmeg

Method

  1. Simmer milk, butter, onion, cloves, peppercorns, garlic and herbs in a pan for 20 minutes.
  2. Strain and return to the pan.
  3. Add breadcrumbs and simmer for 3-4 minutes.
  4. Slowly stir in the cream or mascarpone and add a pinch of freshly grated nutmeg. Season to taste.
