Cantaloupe Melon Sorbet

This easy recipe for a creamy, yet refreshing sorbet is perfect for the end-of-summer evenings, and with melons straight from the fields here at Darts.

Ingredients

  • 130g sugar
  • 230ml water
  • 1 Darts Farm Cantaloupe Melon

 

Method

  1. In a saucepan, bring the sugar and water to boil
  2. Reduce the heat to maintain a steady simmer and cook until it thickens (approx. 10 minutes), then remove from heat
  3. While the mixture cools to room temperature; peel, seed and cut the melon into cubes.
  4. Pop the melon into a blender or food processor and blend until pureed. If needed, use some of the cooled syrup to help combine. 
  5. Place the blended melon into a bowl, and slowly start adding the sugar syrup. It should be slightly oversweet than you want the final sorbet to taste.
  6. Cover and chill the mixture in the refridgerator for at least 1 hour/up to overnight.
  7. Pour into a metal pan and freeze, stir every 30/60 mins until frozen through.
  8. Enjoy your refreshing sorbet at an evening barbqecue with friends!
