Ingredients

  • 12–15 Medjool dates
  • 60g walnuts (or chopped peanuts for a more Snickers-style flavour)
  • 1 tbsp coconut oil
  • 120g peanut butter (Alternatives: almond butter, cashew butter, or sunflower seed butter)
  • 150g chocolate chips (dark or milk chocolate)

Method

  1. Firstly, line a baking tray with parchment paper.
  2. Slice the dates open and place them flat, sticky side down, forming a rectangle shape.
  3. Place another sheet of parchment paper on top and roll the dates out evenly so they’re a little thinner. Remove the top sheet of parchment once finished.
  4. Melt the peanut butter in the microwave for 30 seconds, then spread it across the top of the dates and sprinkle on the nuts.
  5. Next, melt the chocolate and coconut oil in a microwave-safe bowl in 15–30 second intervals until smooth.
  6. Pour the chocolate over the entire surface of the peanut butter layer and scatter more nuts on top.
  7. Place in the freezer for 20–30 minutes until set.
  8. Once set, cut into large pieces using a sharp knife and enjoy!
