Harissa Roast Cauliflower with creamy tahini & yoghurt

Quick & easy to prep & full of fresh flavours of the season! A great healthy side dish or double up for a delicious main.

Ingredients

  • 1 Darts Farm cauliflower, cut into florets & use the leaves
  • 1tbsp harissa paste (or 1tsp harissa powder)
  • 2 tbsp vegetable oil
  • Seasoning 
  • 3 tbsp Tims yoghurt
  • 2 tbsp tahini
  • 1 tsp maple syrup
  • 1/2 tsp Seggianio semi-dried parsley
  • Juice of 1/2 a lemon
  • 1/2 garlic clove, finely crushed
  • 1 tsp Za'atar 

 

Method

  1. Toss the cauliflower in the oil, harissa and seasoning and roast at 200c for 20mins.
  2. Combine the yoghurt, tahini, seasoning, maple syrup, dried parsley, garlic and lemon. To form a smooth and creamy sauce.
  3. For the dressing combine the Za’atar, oil and seasoning.
  4. To assemble spread the tahini sauce on the plate, top with the roasted cauliflower and drizzle in the Za’atar dressing.
  5. Add any other toppings of your choice. We recommend; crispy chickpeas, roast sweet potato, pomegranate, spring onions, rocket & parsley.
