Savoy Cabbage & Leek Soup

A real winter warmer, this seasonal soup made up of Savoys, leeks & potato from our fields and some good quality, local stock!

Ingredients

  • 1 Darts Savoy Cabbage, roughly shredded
  • 2 Darts Leeks, sliced
  • 1 large baking potato, peeled & diced
  • 4 tbsp extra virgin olive oil
  • 1 large onion, diced
  • 1 large carrot, peeled and diced
  • 4 garlic cloves, chopped
  • 2 tsp Cornish Sea Salt
  • 1 tsp crushed chilli flakes
  • 900ml The Pure Stock Co chicken or vegetable stock

Method

  1. Heat the oil in a large saucepan or casserole dish.

  2. Add the onion, carrot, garlic, salt and chilli flakes. Fry over a high heat for 5 minutes.

  3. Turn the heat down to low and cook for another 10 minutes or until softened.

  4. Add the cabbage, leeks and potato and pour in the stock. Bring to the boil and then turn the heat down to low. Simmer for 20 minutes or until the potatoes are softened and starting to break up.

  5. Serve the warm soup in bowls with a good chunk of local sourdough and salted farmhouse butter.
