A great way to use up any leftover Christmas veg - perfect with your Christmas cold cuts !
200g Brussels sprouts, shredded
1 carrot, coarslet grated
1/4 red cabbage, shredded
1 small red onion, sliced
Small bunch of chives, parsley or dill - roughly torn
50g yoghurt
50g mayonnaise
1tsp mustard (of your choice)
2 tsp apple cider vinegar (or any other vinegar)
Put the sprouts, onion, carrot, cabbage and all but a small handful of the herbs in a bowl and mix well to combine.
For us, nothing says Spring like a delicious lamb roast accompanied by minted, seasonal veg and garlic butter new potatoes!
