Fairy Cakes with Vanilla Buttercream Icing

You can't beat homemade cakes! not only do you get to enjoy a delicious treat, but baking at home with the family is great for keeping your minds active.

Prep time: 10 minutes
Cook time: 20 minutes
Serves: Approximately 20 cakes (dependent on size of cases)

  • 6oz Wessex Mill Self Rasing Flour, sifted
  • 1 tsp Baking Powder, sifted with the flour
  • 6oz Caster Sugar, sifted
  • 6oz Margarine 
  • 3 Large Black Dog Free-Range Eggs
  • 1 tbsp water (optional) 

You will need cupcakes cases and a cupcake tray! 

For the vanilla buttercream icing...

  • 600g icing sugar, sifted
  • 300g unsalted or salted butter, softened
  • 1/3 tsp of Littlepod Natural Vanilla Paste
  • A few drops of food colouring Food colouring (optional)
  • Decoration (chocolate sprinkles, hundreds-and-thousands, etc)


  1. Pre-heat your oven to 180c;
  2. Mix all of the cake ingredients together in an electric mixer or in a large bowl, until smooth;
  3. Line a cake tray with cupcake cases and put an even amount of mixture in each case;
  4. Place in the oven for 15 - 20 minutes. To check that they are cooked, use a knife or skewer to pierce the cake; if it comes out clean, they are done!
  5. Place the cakes on to a baking tray and wait for them to cool before icing

For the icing...

  1. Beat 600g sifted icing sugar and 300g butter together with the vanilla paste and colouring if using, add 2-3 tablespoons of boiling water to loosen and beat until smooth.
  2. Fill a piping bag with a star nozzle and pipe onto cupcakes and decorate!
