Homemade Blueberry Sauce

This quick and easy blueberry sauce is not only incredible with a dollop of Greek yoghurt on pancakes, but is the perfect accompaniment for homemade desserts such as pies and cheesecakes!

Prep time: 5 minutes
Cook time: 10 minutes
Serves: Perfect for pancakes!

Ingredients

  • 3 cups of blueberries
  • 1 cup of water
  • 1/2 cup sugar
  • 1 1/2 Tbsp cornstarch mixed with 3 Tbsp water
  • 1/2 tsp vanilla extract

Method

  1. Place 1 1/2 cups of berries in to a small saucepan. Add water and sugar, then place over a medium-high heat.
  2. Bring the mixture to a low boil and cook until the berries are just beginning to break down
  3. Stirring constantly, add the cornstarch mixture to the pan. Bring to a boil, reduce the heat and simmer over a low heat for 2-3 minutes (until the sauce thickens). 
  4. Add additional water, 1 tbsp at a time, to thin if needed.
  5. Remove from the heat and stir in the remaining berries.

Serve hot or chilled!
