Lemony Beans, Parmesan & Charred Asparagus

Beany, creamy & delicious! Sprinkle with some chilli flakes for an extra kick of flavour

Ingredients

2 tbsp olive oil, plus extra to serve
1 onion, finely diced
2 garlic cloves, crushed
500g  Bold Bean White Beans (about 3/4 a jar), with their bean stock
2 lemons
10 asparagus spears
Parmesan

 

Method

  1. Heat the oil in a pan over a medium-low heat. Add the onions and cook for 7-8 minutes until looking nice and soft and jammy, then add the garlic and cook for another minute
  2. Add the beans with their bean stalk and stir in with the garlic and onions. Cook down to allow the beans to get brothy and creamy, about 3-4 mins.
  3. Meanwhile, char the asparagus spears in a griddle pan or under the grill with a splash of oil and a good pinch of salt
  4. Remove the beans from the heat and squeeze in the juice of one lemon and half its zest. Season with salt and pepper and mix to combine.
  5. Serve the beans in bowls, scatter with a generous grating of parm, top with the asparagus extra lemon zest and a good drizzle of olive oil
