Spiced Lamb Quesadillas

Quick snack or light lunch, spiced lamb mince and melting cheese quesadillas with a tangy mint and apple salsa. Brilliant value lamb for a delicious Mexican dinner, we guarantee our lamb mince is lean and we can portion it ready for home freezing.

Ingredients

  • 450g Lean Lamb Mince
  • 1tsp Ground Coriander 
  • 1tsp Ground Cumin 
  • 50g Baby Spinach Leaves
  • 2tbsp Freshly Chopped Flat-Leaf Parsley
  • 8 Flour Tortillas
  • 100g Crumbled Feta Cheese or 125g Mozzarella Cheese, drained and torn
  • 2tbsp Olive Oil
  • Salt and freshly cracked Black Pepper to taste
  • 1 or 2 large Green Apples, cored and diced
  • Large handful of freshly chopped Mint
  • 1tbsp mild Olive or Groundnut Oil
  • 1tbsp Lemon or Lime Juice
  • 5-10ml runny honey

Method

  1. Preheat the oven to gas mark 7 / 220'C.
  2. Heat a large shallow, non-stick frying pan and dry fry the mince with the spices and seasoning for 8-10 minutes. Remove from the heat and stir through the spinach and parsley.
  3. Place 4 tortillas on a chopping board and spread evenly with the cheese, then the lamb mixture. Sandwich together with the remaining tortillas, transfer to a non-stick baking sheet and brush with oil. 
  4. Cook in the oven for 9-10 minutes until the tortillas are crispy and the lamb is cooked through.
  5. Meanwhile, prepare the salsa; in a small bowl mix all the ingredients together and set aside.
  6. Slice each quesadilla in half and serve immediately with the apply and mint salsa and a green salad.
