A delicious small plate to go with a summer BBQ when entertaining!
200g feta cheese
4 tbsp Tims Greek yoghurt
1 garlic clove
1 tbsp olive oil
2 medium courgettes, sliced into rounds
Juice & zest of 1/2 lemon
1 red chilli, finely chopped
Big handful of fresh mint leaves torn
Salt & pepper
Optional - Toasted seeds
Put the feta, Greek yoghurt and garlic into a bowl along with a small pinch of salt.
Blend with a stick blender until smooth and then spread on a serving plate and sprinkle over some black pepper.
Heat the olive oil in a frying pan over a high heat and fry the courgettes for about 1-2 minutes per side. Layerthe fried courgettes on top of the whipped feta and drizzle over any remaining juice from the pan.
Squeeze over the lemon juice, the sprinkle over the lemon zest, chopped chilli and torn mint leaves. Finish with another drizzle of olive oil some more black pepper and toasted seeds!
For us, nothing says Spring like a delicious lamb roast accompanied by minted, seasonal veg and garlic butter new potatoes!
