DARTS FARM CHARD WITH GARLIC, QUINOA, TOMATOES AND PARSLEY

This warm vibrant quinoa salad using fresh rainbow chard from our fields, is bursting with flavour! It makes a delicious side to a Darts Farm BBQ or simply enjoy it as a main.

Ingredients

  • 1 large bunch of Darts Farm Rainbow Chard 
  • 100g Quinoa 
  • 5oog Isle of Wight Cherry Vine Tomatoes, quarterd 
  • 4 tbsp Honest Toil Olive Oil 
  • 4 Garlic Cloves, sliced
  • 2 tsp ground Cumin 
  • 2 tsp unrefined Caster Sugar 
  • 2 tbsp Red Wine Vinegar 
  • 1 handful of fresh Parsley, roughly chopped 

Method

  • Place the quinoa in a large pan, cover with salted water and bring to boil, reduce the heat and simmer for about 10-12 minutes, until the grains are tender. Drain and leave to cool 
  • Rinse the chard and strip the leaves from their stalks, slice the stalks and chop the leaves
  • Add the stalks to a large pan of salted water and bring to boil. Leave for 1-2 minutes, add the leaves. Simmer for another 2 minutes, untill tender then drain
  • In a small pan, warm your oilive oil, add the garlic and cumin and allow to sizzle for 1-2 minutes.
  • Place the tomatoes in a bowl and cover with your garlic and cumin oil. Add the sugar, vinegar, parsley, and season and stir
  • Add to the quinoa, transfer onto a serving plate and tuck in!
