Darts Farm Spiced Red Cabbage

This is a festive way to creating something a little different for your table this christmas.

Ingredients

  • 1 Darts Farm red cabbage (1 cabbage should do 4-6 portions easily)
  • Olive Oil
  • Salt
  • 1 bottle of Pebblebed red wine
  • 80grams of brown sugar
  • 1 table spoon of red wine vinegar
  • 2 bay leaves
  • 2 star anise and
  • 5 juniper berries per cabbage

 

Method

  1. Wash your red cabbages & remove a few of the outer leaves & cut in to quarters top to bottom, remover the core and thinly slice across the wedges.
  2. Put your sliced cabbage in to a large sauce pan, with a small drizzle of oil & a pinch of salt. Put the sauce pan on a low heat to start sweating the cabbage off.
  3. After 10 minutes add 1 bottle of Pebblebed red wine,  brown sugar,  red wine vinegar, bay leaves, star anise and  juniper berries.
  4. Simmer the cabbage mix until the liquid has almost all gone & the cabbage is soft.
  5. Season to taste & cabbage then serve!
