Enjoy these fresh muffins - crafted from local ingredients and baked with love!
They taste even better with a dollop of fresh yoghurt mixed with teaspoon of Darts Honey for some extra sweetness.
Preheat oven to 350°F (175°C). Line a 12-cup muffin paper cases
In a large bowl, mix together the flour, baking powder, salt, sugar, and cinnamon. Stir in the rhubarb.
In another bowl, whisk together the milk, oil, and eggs.
Create a well in the centre of the dry ingredients and pour in the wet mixture gradually, until its all combined. Be careful to not over-mix
In a small bowl, mix the streusel ingredients with a fork until crumbly. Start with 4 tablespoons of butter and add more if needed.
Divide the batter evenly into the muffin cups. Sprinkle streusel on top.
Bake for about 20 minutes, or until golden brown.
Enjoy warm with a dollop of fresh yoghurt mixed with Darts Honey!
