400g of Pearl Quinoa
300g of fresh mushrooms
1 stock cube
Boil the quinoa for 12 minutes and then drain
In the meantime, chop the mushrooms and fry in a pan.
In a separate pan, use olive oil and brown the onion. Once brown, add the quinoa and 1 pint of stock to the pan.
Once cooked, add the mushrooms to the other pan, along with parmesan.
Add chopped parsley, salt and pepper to taste.
For us, nothing says Spring like a delicious lamb roast accompanied by minted, seasonal veg and garlic butter new potatoes!
