Crown Prince squash & chicken traybake

If you are looking for something simple, seasonal and full of flavour, this easy traybake is perfect for a cosy autumn evening and is sure to please the whole family. Darts Farm grown sweet squash, earthy chickpeas, savoury chicken and crispy kale come together in this hearty, high-fibre dinner that's packed with seasonal goodness.

Ingredients

1 Darts Medium Crown Prince Squash

2 Red Onions

1 Leek

1 Darts Broccoli

1 Tin of Chickpeas

4 Chicken Breasts/ Thighs

2 Cloves of Garlic

1 tbsp Chopped Rosemary

100g Kale

Olive oil

Salt & Pepper

Method

  • Preheat your oven to 200℃.
  • Peel the squash, remove the seeds and cut into 3cm cubes. Place the squash, diced onions and sliced leek in a large roasting tray, drizzle with oil and season well. Roast for 10 minutes.
  • Remove the tray from the oven and add the broccoli, chickpeas and seasoned chicken. Toss everything together and return to the oven for 25-30 minutes, until the chicken is cooked through and the vegetables are tender.
  • Stir through the garlic, rosemary and kale. Return to the oven for a further 6-8 minutes, until the kale has wilted.
  • Season to taste with salt & pepper and optionally add a squeeze of lemon juice or a sprinkle of feta before serving.
