Sweetcorn & Cajun Spiced Fritters

Our chefs have been busy creating seasonal recipes, using sweetcorn fresh from our fields... These fritters are a delicious veggie option for any occasion!

Ingredients

  • 3 ears of Darts own corn (boiled for 10mins and stripped with a knife)
  • Half a bunch of finely sliced spring onions 
  • 1-2 teaspoons of cajun spice
  • 1 teaspoon of Darts Farm honey
  • 3 Black Dog eggs
  • 3oz plain flour 
  • 30ml milk
  • Oil for frying

Method

  1. To make the batter crack eggs into bowl and whisk, add flour and milk and mix till smooth.
  2. Once smooth, add all of the other ingredients and mix well to combine.
  3. Heat a frying pan on a low heat and add enough oil to grease the base, add enough mix to pan for desired size and cook for three minutes on each side or until golden brown.
