Sally's BGE Grilled Courgettes

A delicious side dish to share with family and friends this alfresco season!

Prep time: 5 minutes
Cook time: 10 minutes
Serves: 4-6 as a side

Ingredients

  • Darts Farm Courgettes (as many as you like, we usually do 2!), diagonally sliced
  • 1 tablespoon of local salted butter
  • 2-3 garlic gloves, chopped
  • 1 lemon
  • Chopped coriander
  • A sprinkle of Cornish Sea Salt

Method

  1. Heat your Big Green Egg to 180/200°C
  2. Melt the butter, before stirring in the chopped garlic, the rind of the lemon and chopped coriander
  3. Take your sliced courgette and evenly coat in the butter mix
  4. Place all slices on to the Egg Grid
  5. Chargrill for approx. 10 minutes, turning occasionally
  6. Remove from heat, serve on a wooden sharing board, squeeze with remaining lemon juice and sprinkle fresh sea salt
