Sally's BGE Curried Potatoes

Add a kick of flavour to your BGE barbecue with Sally's favourite quick'n'easy curried potatoes!

Cook time: 10 minutes

Ingredients

  • Mids Potatoes (as many as you like!)
  • Crushed garlic
  • Curry powder or Bombay spice mix
  • Chopped onions
  • Local butter
  • Honest Toil Olive Oil

Method

  1. Heat your Big Green Egg to 200°C
  2. Par-boil your mids potatoes, then cube them into chunks
  3. Use your Convector & place a large wok on top. Add a glug of olive oil and a generous nob of butter
  4. Heat, then add your onions, garlic, curry powder and your potatoes. Toss to coat evenly
  5. Cook for 8 minutes, turning occasaionally
  6. Serve in a sharing bowl & season to taste
